How is a chest assembled?
From selection to the numbered passport — the stages by which each box is assembled by hand, and our quality rules.
Every chest goes through five stages. First — selection: produce is taken only from the orchards of Ordubad, from fruit harvested in season. Apricot qakh is dried in the sun, on the shaded side; raisins are separated from the bunch by hand; walnuts are cracked for fresh kernels.
Second — preparation: the jams are cooked in a copper pot, over an open fire, in small batches. Third — assembly: each compartment is measured for its own product; no compartment is left empty, none is overfilled. Fourth — documentation: the passport is filled in, the contents sheet is placed inside, and in Zərnigar the master signs the inside of the lid.
Fifth — sealing: the chest is tied with ribbon and a seal is set. From this moment the lid is opened only by the recipient's hand. Our workshop has a rule: the person who packs the chest must open it and look inside one last time — because the first look will be the recipient's.
